BAKED VADAI IN HOT GARLIC SAUCE
Vadai is a traditional South Indian snack which is eaten during breakfast or as a snack anytime. It is prepared with broken black gram traditionally. It looks like a doughnut. I feel very guilty after having one or two of them as it is fried in the oil. I have always thought about changing the frying rules . Here I am with the baked vadai which is as tasty as the ones you fry in the oil with the ingredients almost similar to the vegetable scones.
I have prepared the hot garlic sauce the chinese way to get a break from the traditional coconut chutney/ sambar served with the vadai and it tasted good.
Broken black gram
It is nutritious and is recommended for diabetics.
Ingredients:
For the vadai:
Broken black gram-2 cups(soak for 30 minutes in water)
Onion- 2 medium sized(finely chopped)
Cilantro- 1 bunch(finely chopped)
Baking powder- 1 tspn
Milk- 1/4 cup
Mozarella cheese(grated)- 4 tbspn
Cheddar cheese-2 tbspn
Black pepper/ green chillies- 1 tspn
Salt to taste
For the sauce:
Garlic(chopped)- 1 tspn
Scallions- 1 medium sized
Tomato- 1 medium sized
Soy sauce- 2 tspn
Oil- 1 tbspn
Salt- one pinch
Scallions- 1 medium sized
Tomato- 1 medium sized
Soy sauce- 2 tspn
Oil- 1 tbspn
Salt- one pinch
Method:
Vadai:
1. Preheat the oven for 10 minutes at 180 degrees. In the meanwhile grind the black gram in the blender by adding the milk little by little.
2. Add the other ingredients and mix it well.
3. Take small balls of the dough and prepare them like doughnuts and place them on the greased baking tray.
4. Now bake for 20-25 minutes.
Sauce:
1. Heat the frying pan and add the oil.
2. When the oil is hot add the chopped garlic and cook until golden brown.
3. Add the tomatoes now and once they turn soft add soya sauce, salt and at the end add the scallions.
Pour the sauce on the baked vadai and serve it in a bamboo skewer.
