With the very heavy rains and the cold season is on, now it's time to have something hot and yummy and definitely have a watch on your diet.
This radish fingers is a healthy Italian way to eat yummy starters. Pan fried with minimum oil is my favourite choice. Kids are on their end of term holidays and you can definitely try this as an evening snack for your kids and impress them.
Grated radish- 1 cup(app.,3 red radishes-round and small ones)
Grated cheddar cheese- 1/2 cup
Stale bread crumbs- 2 cups
Grated garlic/ garlic paste- 1/2 tspn
Dried oregano- 1 tspn
Salt to taste
Olive oil- 1 tbspn (to pan fry the radish fingers)
Mix all the ingredients in a bowl and shape them to fingers. Do not panic when you see the fingers to be moist a bit. It is because of the water released by the radish. But, later when you fry it in the non-stick pan it will be fine.
Heat the pan and add the olive oil under very low fire. When the pan is quiet ready to fry the fingers place them in the pan with equal spaces and cover with a lid.
Cook for 5 minutes and later turn the side. Cook until brown on both the sides. The fingers might appear very soft , but once taken off the pan it would be fine. For better results cook with the lid on. Serve with your favourite sauces and chutneys and relish this yummy and healthy snack.
