COCONUT MILK AND MANGO ICE CREAM / AISKRIMU WA MNAZI NA MAEMBE
From Kilifi now to Malindi. Through all the way I could see Mango and coconut trees welcoming us on the highway. I bought mangoes and coconut from a local farmer. Made use of them by making this dessert. Kenyan dishes are very simple and easy to prepare and so is this ice cream with the coconut milk and pureed mangoes with the cinnamon flavor.
Cinnamon powder- 1 tspn
Corn flour- 1tbspn
Water- 2 tbspns

Ingredients:
Coconut milk- 1 cup
Puree of 1 mango
Powdered sugar- 1/2 cup
Puree of 1 mango
Powdered sugar- 1/2 cup
Cinnamon powder- 1 tspn
Corn flour- 1tbspn
Water- 2 tbspns
Method:
1. Heat the sauce pan and pour the coconut milk in the pan.
2. Remember to cook in low fire and now add the mango puree and sugar.
3. Keep stirring slowly and now add the corn flour made into a paste with the 2 tbspns of water. Keep stirring until the mix thickens. Remember not to boil the mix.
4. Add the cinnamon powder and mix gently. Switch off the fire. The cooking time should be between 5 to 8 minutes. Pour the mix in the mould of your choice and freeze for 2 hours or until set. Serve with syrup of your choice.
To prepare the ice cream super fast increase the amount of corn flour by 4 tbspns and freeze for half an hour.
